Tiramisu with Digestive biscuits

INGREDIENTS
Mascarpone cheese layer:
Mascarpone cheese 1 ΒΌ cup 300 grams
1-2 tbsp whipping cream
1 tablespoon sugar or sweetener of choice
β tsp vanilla bean powder
Biscuit layer:
Biscuits digestive 6 biscuits crushed
1 tbsp instant coffee mixed with water or 1 shot espresso.
Cocoa powder for dusting
DIRECTIONS
Crush the digestive biscuit and add coffee to the biscuits on the serving plate.
In a bowl, add mascarpone cheese, whipping cream, sugar, and vanilla until smooth and creamy with a hand whisk.
Add the mascarpone cheese later on top of the biscuit and smooth it out.
Add cocoa powder on top of the creamy layer.
Refrigerator for 30 minutes or more. Enjoy!
NOTES
For extra sweetness, add sweeteners of choice like honey, maple syrup, agave, monk fruit extract, etc.
If you have lady fingers on hand, soak the biscuits in espresso for flavor.
