Baked feta & Veggies PASTA

Prep Time: 8 minutes

Prep Notes:

Prepare all your ingredients and cook in an oven safe dish!

Cooking Time: 35-55 minutes

Yields: 3-4 servings

INGREDIENTs

  • 1 zucchini, round slices

  • 2 paprika, diced

  • 1 pack feta cheese

  • A handful of cherry tomatoes

  • 1 cup mushrooms, sliced

  • 3 tbsp extra virgin olive oil

  • Salt & pepper

  • Juice of 1/2 lemon

  • Herbs (oregano, basil, & thyme)

  • 300 ml pasta sauce of choice

  • 1/4 cup water

  • 1 cups pasta (GF if preferred)

DIRECTIONS

  1. Prepare all your ingredients by chopping and setting veggies aside.

  2. Start by adding all ingredients to the dish and add the sauce and some water to cook.

  3. Cover the dish with aluminum foil and place in the oven for 35 minutes.

  4. Make sure you mix the baked feta and veggies in the dish before adding the pasta.

  5. Once the veggies are cooked halfway through, add your pasta and cook in the oven until the pasta is cooked well.

  6.  Enjoy the dish & save the rest for later!

NOTES

  • If you want extra protein, add your protein of choice like tofu, beans, etc.

  • Feel free to add your own ingredients!

  • This can last for 4 days in an airtight container in the refrigerator!

  • You can cook the pasta separately and add it to the mix if preferred.
