Prep Notes:

Prepare all your ingredients and the container you want to do the salad in! Keep it Simple and do your own mix!

Yields: 2-4 servings

Ingredients

Salad

  • 1 cup lettuce

  • 1 cup baby spinach leaf

  • 1 red, yellow or green paprika

  • 1 box cherry tomatoes

  • 1 cucumber, chopped

  • Sunflower Seeds

Dressing

  • 3 tbsp olive oil

  • 1/2 lemon juice

  • 2 tsp balsamic vinegar

  • 1 tsp tahini (optional for creaminess)

Directions

  1. Cut &wash all your veggies & put it in your container.

  2. Squeeze the lemon juice, than add balsamic vinegar, olive oil & tahini.

  3. Add the dressing to the salad & garnish with pumpkin seeds & enjoy!

Notes

You can add nutritional yeast for additional B vitamins.

Feel free to any additional fruits or vegetables that you think works well with you salad!

Store in an airtight container without the dressing to stay fresh for the next few days!
