Oven Baked Eggs With Mushrooms

Preparation:

Prepare all your ingredients and container beforehand to save time.

Ingredients:

  • 2 eggs

  • Olive oil

  • 1 onion

  • Mushrooms

  • Salt & pepper

  • Oregano

  • Tomato pesto

  • Cheese (optional)

Steps:

  1. Preheat the oven to 220 Celsius.

  2. Chop the onions, mushrooms, seasoning (salt, pepper, & oregano), and tomato pesto.

  3. Heat some olive oil in a pan. Sauté onion and mushroom in a pan. Then, add your seasoning and tomato pesto.

  4. Spread olive oil in a ceramic pan that can be placed in an oven.

  5. Beat the eggs in a bowl and sauteed vegetables. Add the egg mix to the pan.

  6. Place the ceramic pan in the oven and cook for 10 minutes or until cooked as desired. Enjoy!

Tips:

  • Feel free to add any additional ingredients.

  • For extra antioxidants, add leafy greens, herbs, and vegetables like spinach, kale, and paprika.
